In the 1990s, Vidoni moved to New York City, co-owning a café celebrated for its Northern Italian dishes featuring truffles. His role extended beyond the café as he supplied truffles to renowned chefs, establishing himself as a trusted figure in the U.S. culinary world. A notable achievement during this period was the sale of a 1kg white truffle to a top chef at a prestigious culinary event, underscoring his prominence in the industry.
Establishing Italtouch in Dubai
Recognizing Dubai’s emerging culinary market, Vidoni relocated there in 2011. In 2012, he founded Italtouch, aiming to introduce premium truffles and gourmet products to the Middle East. His expertise and dedication quickly positioned Italtouch as a leading supplier in the region. A significant milestone was when he facilitated the sale of a record-breaking truffle to a fine dining restaurant in Dubai’s DIFC, marking a new high for the UAE’s luxury food scene.
Adapting to Challenges and Embracing Innovation
The COVID-19 pandemic posed challenges, but Vidoni adapted by launching an online platform offering gourmet products to private consumers. This initiative expanded his reach, allowing food enthusiasts across the UAE to access premium truffles and caviar from the comfort of their homes.
