Early Life: A Foundation in Tradition

Fayez Azzam’s culinary journey began in the heart of his family’s village, where childhood holidays were spent harvesting olives and assisting his mother and grandmothers in preparing traditional preserves like labneh, makdous, and kawarma. Foraging for seasonal wild herbs and mushrooms with his grandparents instilled in him a profound appreciation for simple cooking and the satisfaction of creating dishes from nature’s bounty.

The Spark of Passion

At 14, Fayez’s uncle, Chef Hussam, returned from France to open a kitchen specializing in traditional Syrian cuisine. Eager to learn, Fayez assisted him daily after school. Under his uncle’s guidance, he discovered a passion for the culinary arts, leading him to pursue formal education in the field.

Pursuing Culinary Dreams Amidst Adversity

After high school in Syria, the outbreak of war made it challenging to find suitable educational opportunities. Undeterred, Fayez moved to Lebanon to study Hospitality Management and Culinary Arts. Over three years, he balanced rigorous studies with hands-on experience in one of Beirut’s top kitchens, an endeavor that fortified his resilience and skill.

Setbacks and Resilience: A Test of Determination

Upon graduating from the Institute of Culinary Arts and Hospitality Management in Beirut, Fayez aimed to pursue a master’s in Culinary Arts and Kitchen Management in Spain. Despite securing a scholarship, his student visa was rejected three times. As he prepared to reapply, the COVID-19 pandemic struck. While many faced uncertainty, Fayez seized an opportunity to work at a vegan restaurant, where he spent nine months refining plant-based cooking and innovating with homemade alternatives like tofu.

On August 4, 2020, the Beirut Port explosion devastated the area where he worked. Surviving this tragedy prompted Fayez to make a life-altering decision: to move to Dubai and embark on a new chapter.

Realizing a Dream: Working with Chef Mohamad Orfali in Orfali Bros Bistro

Fayez joined the opening team of Orfali Bros Bistro, led by Chef Mohamad Orfali. Together, they pursued the dream of working in a Michelin-starred restaurant. Their dedication bore fruit when Orfali Bros Bistro was named the best restaurant in the Middle East and North Africa three years in a row by 50 Best Restaurants—a testament to their hard work and passion.

Embracing Challenges: A Philosophy of Growth

Fayez views challenges and setbacks as integral to his journey, embracing them as opportunities for growth. His passion for cooking, the joy of creating new dishes, and inspiration from his mentor keep him motivated. He emphasizes the importance of remembering one’s beginnings and embracing every challenge as a lesson that enhances one’s craft.
